What does one do with 11 lbs. of zucchini?
Posted by Steve on July 31st, 2005 This morning I went out to check on the garden since it had been almost a week since either of us had done anything more than glance it from the cool comfort of our air conditioned house. I was shocked (ok, not really) to find several oversized zucchini. I brought them inside and weighed them: 11 lbs. 12 oz.! One was 20″ long! Most of them are too big to eat directly. So, Jen’s going to make (more) zucchini bread, and I think we’ll try stuffed zucchini this week. Anyone want some jumbo zukes?
The rest of the garden is shaping up, too. We have some tasty looking “Sungold” cherry tomatoes ready to pick. Our “Early Girl” tomatoes aren’t exactly early, but there’s lots of fruit on the vine. We’ve harvested a single scallopini squash so far, but the plants are growing like crazy and are loaded with blossoms. We actually have a few pole beans on the vine now. And we’ve got a handful of 2-4 inch peppers. I’ve added additional images to our “Vegetable Garden” photo album….
